Fresco Gelateria: How to Make Christmas Gelato

Gelato may not be your go to dessert in the winter, but if you’ve ever been to Fresco you know that’s a mistake. From eggnog to gingerbread, there’s a flavor to match your spirit for any season. And guess what? Santa’s got a little secret… You can do it yourself! That’s right, just follow the simple directions and boom, you’ll impress the family with the perfect peppermint treat for Holiday dinner… And I know it’ll be hard, but always remember sharing is caring. Candy Cane Gelato

Ingredients (one pound/four servings):
Three cups of milk.
A half-cup of sugar.
One vanilla pod (or one teaspoon vanilla extract).
Two candy canes.

Mix milk and sugar. Heat to medium temperature (do not boil). Bring to a low temperature and add vanilla pod and candy canes (crushed), stirring constantly until candy canes dissolve. Remove from heat. Strain hot gelato base into a cold bowl. Set aside to cool down. Once room temperature place in gelato machine and continue as instructed by machine. If you don’t have a gelato machine, place bowl in freezer for thirty minutes. Remove from freezer when the base starts to crystalize and whisk for two to three minutes. Return to freezer for twenty minutes and remove to whisk again. Repeat five times. Enjoy!
